Bake With Me - Valentine's cookies from Sweet Laurel

I love baking. My mom used to always bake olive oil cake back when I was little and have me help her bake! The joy of baking got doubled when my daughter was old enough to start baking with me- that was around age one and halfish. 

We have baked so many things already and our family favorite is ANYTHING from Sweet Laurel cookbook. We are lucky to live close by Sweet Laurel bakery and try all of her delicious cookies, and cakes AND also bake them at home- it's a double win!!

We baked these Valentine's heart cookies back in 2019 and it was so much fun! I am sharing this in case you need super easy cookie ideas for this Sunday!

What I love about this recipe is that it is simple, easy and delicious! Your mini can help you with the ingredients, cookie dough and even have a bite of the raw dough! 

Here is what you need: 

2 cups almond flour

1/4 cup melted coconut oil

1/4 cup 100% maple syrup

1 teaspoon vanilla extract 

1/4 teaspoon Himalayan pink salt

 optional: beat juice to add color

 

Here is how to make the dough: 

combine all your dry ingredients first. I like to whisk them before I add the wets. 

Pour in the wet ingredients, stir until you have a soft dough. You can do a taste test at this point!!

If you want colored dough, add your beet juice to all or some before you roll your dough. 

Now we roll into a 1/2 inch thick dough. Refrigerate for about 10 minutes and then cut into heart shapes ( I had 2 different size heart cutters)

Place the cookies on a baking sheet lined with parchment paper and in the oven for about 10 minutes. I would check at min 9 to check softness, These cookies are super soft so you can add a min or 2 to get a little more hard. 

Best enjoyed with your mini at tea time with little tea cups and all!
